Dom Pérignon is made only in years the house judges strong enough to declare. There is no non-vintage version — every bottle carries a year, and in weak years the house simply does not release one. That single rule is what separates it from every other champagne on this site.
In Hong Kong it is the bottle that reads instantly as an occasion, which is why it is our top gift above HK$1,000.
Which vintage
2015 — warm and generous. The most immediately open of the current releases: ready to drink rather than needing to be kept. If it is being opened this month, buy this one. Also available with the presentation gift box, which is what you want if you are giving it.
2012 — a small, difficult harvest that produced concentrated, tightly built wine. This is the vintage critics point to for structure and ageing potential. The more serious of the two.
P2 2006 — the deuxième plénitude, or second release. The house holds back part of a declared vintage and releases it again many years later, after roughly sixteen years on its lees instead of eight. Extended lees contact changes texture rather than fruit: broader, more savoury, much longer. Genuinely a different drinking experience, not a marketing tier.
How to serve it
This is where most people lose value. Serve at 10–12°C, not ice-cold. Over-chilling flattens a wine at this level and hides exactly what you paid for. Use a proper white wine glass, not a flute — a flute looks the part and conceals the wine.
Give it fifteen to twenty minutes in the glass. Dom Pérignon opens slowly and keeps changing.
Giving it
At this price the box matters. Handing over a boxed bottle reads as a considered gift; a bare bottle reads as something picked up on the way. If it is going to a client, a boss or a wedding, buy the boxed version.
