Blanc de Blanc Champagne

Blanc de Blancs means white from whites: Champagne made entirely from Chardonnay.

What that changes. Without Pinot Noir and Meunier in the blend, the wine is lighter in body, higher in acid and more citrus-driven — the version to open before dinner rather than alongside a roast. It also tends to age well, gaining a nutty, pastry character with time on the cork. The Côte des Blancs is the heartland; a village name such as Le Mesnil or Avize on the label points there.
