Collection: Pauillac

Pauillac is the commune of Lafite, Latour and Mouton — three of the five First Growths in one village. No other appellation in the world has that concentration.

The style. The most structured and longest-lived reds on the Left Bank. Firm blackcurrant fruit with cedar and graphite behind it, and tannins that need years. Pauillac is the serious one: if Margaux is perfume and Saint-Julien is balance, Pauillac is architecture.

What that means in practice. Do not open a young Pauillac casually. Decant ninety minutes minimum, and give it red meat — the tannin needs protein and fat to soften against.
