Spain Sparkling

Cava and the rest of Spain's sparkling wine.

Why it is worth attention. Cava is made the same way as Champagne — second fermentation in the bottle, then time on the lees — but from Macabeo, Xarel·lo and Parellada grown in Catalonia, and it costs a fraction as much. The ageing tiers matter: standard Cava sees nine months, Reserva eighteen, Gran Reserva thirty. Anything labelled Brut Nature has had no sugar added at the end.
