Argentina, which for most people means Malbec — fairly, but not only.

Altitude is the thing. Mendoza's vineyards sit between roughly 900 and 1,500 metres, and the Uco Valley higher still. Thin air means strong sun in the day and cold nights, which keeps acidity in grapes that would otherwise turn flat in the heat. That is why Argentine Malbec is dark and ripe but still fresh. Cabernet Franc from the same sites is the one to watch.
