Baijiu and other Chinese spirits.

Reading the style. Baijiu is grouped by aroma type rather than by region: sauce aroma (jiangxiang), the style of Moutai, is the most savoury and complex; strong aroma (nongxiang) is the most widely drunk and fruitier; light aroma (qingxiang) is the cleanest of the three. Most sit at 50% ABV and up. Served at room temperature in small cups, alongside food rather than before it.
