Bordeaux White

Bordeaux makes white as well as red, and almost nobody outside the region talks about it.

The blend. Sauvignon Blanc brings the acidity and the cut; Sémillon brings weight and a waxy texture that fills the middle. Entre-Deux-Mers is the everyday version, unoaked and sharp. Pessac-Léognan is the serious end — barrel-fermented, closer in shape to white Burgundy, and one of the few dry whites outside Burgundy that genuinely improves for ten years.
