How the style has changed. The big, buttery California Chardonnay of the 1990s is no longer the default — cooler sites in Sonoma Coast, Carneros and Santa Barbara now make tighter versions with less oak. Napa Sauvignon Blanc is riper and rounder than Sancerre. Oregon adds Pinot Gris and Chardonnay at a lighter weight. Read the region on the label rather than the state; it tells you far more.
