Where the styles split. Barossa and McLaren Vale Shiraz is the full, warm end — ripe fruit and soft tannin. Coonawarra and Margaret River grow Cabernet Sauvignon that is firmer and more structured. The Yarra Valley and Tasmania make cooler-climate Pinot Noir and Shiraz. New Zealand's reds are mostly Pinot Noir, from Central Otago in the south island and Martinborough in the north.
