Why the age statements are low. Heat speeds everything up. In a subtropical warehouse the spirit moves in and out of the oak far faster than it does in Scotland, and evaporation runs several times higher — so a young Taiwanese whisky can carry the colour and depth of something much older, and there is far less of it left in the cask. Judge these by taste, not by the number.
