La Chapelle Calon 2004, St. Estephe (1x75cl)

Saint-Estephe is on the left bank of Bordeaux, an appellation usually associated with structured, Cabernet-led blends. This one now has more than twenty years in bottle.

Bottles this old vary from one to the next depending on how they were stored, so open it with curiosity rather than expectations. Stand it upright a day ahead, pour carefully off the sediment, and drink it over dinner the same evening.

Tasting notes

A mature left bank Bordeaux typically moves towards dried fruit, cedar, tobacco and earth, with tannins that have settled down. Decant gently, serve around 17°C, and do not leave it open overnight.
