Bottle-fermented the same way Champagne is made, but from Trentino in northern Italy. That usually means finer bubbles and a drier, cleaner profile than the sweeter Italian sparklings people expect.

Keep one cold in the fridge for whenever it's needed — friends arriving, a birthday, dim sum on Sunday. Non-vintage means there's no reason to save it for a special day.
