Tasting notes

Junmai daiginjo is usually served chilled rather than warmed, so keep it in the fridge and pour small measures so it stays cold across a long meal. A wine glass shows the aromatics better than a small cup, and it sits well with sashimi, steamed fish and lighter dishes.
