Billecart-Salmon has been family-owned since 1818 and is based in Mareuil-sur-Aÿ. Brut Réserve is the house's non-vintage and its calling card.
What the house is known for. A long, cold fermentation — slower and cooler than most houses use. The result is a champagne with fine, persistent bubbles and a notably clean, precise character. Billecart is the name that comes up when people talk about elegance rather than power.
When to drink it. Serve at 8–10°C. Excellent as an aperitif, and good with seafood, sashimi and lighter dishes.
Is it worth it? Among people who drink champagne seriously, Billecart-Salmon is one of the most consistently respected houses — and it is less obvious as a gift than the biggest names, which some recipients appreciate.
