Vermouth and related aromatised wines.

Two things people get wrong. First, vermouth is wine, not spirit — it is fortified and flavoured with botanicals, and at under 30% ABV it carries no Hong Kong spirits duty. Second, it goes off. Once opened it belongs in the fridge and is best inside a month; a dusty bottle on a warm shelf is why a lot of home Negronis taste flat.
