Why it suits the food here. Koshu is a pink-skinned grape grown in Japan for centuries and vinified as a white. It is light, low in alcohol and very low in obvious flavour — which sounds like a criticism and is not. It is one of the few wines that sits behind raw fish, delicate dashi and light dim sum without covering them. Drink the youngest vintage on the page.
