Where each one sits. Chablis is Chardonnay grown far enough north to stay lean and mineral. Move south into the Côte de Beaune and the same grape gets rounder and usually sees oak — Meursault, Puligny, Chassagne. Sancerre and Pouilly-Fumé in the Loire are Sauvignon Blanc, sharper and more herbal. Alsace runs Riesling, Pinot Gris and Gewurztraminer, and is the one region here that labels by grape.
