Collection: Canada

Canada, which is on this list mostly for icewine.

How icewine is made. The grapes are left on the vine into winter and picked frozen, usually at minus eight or below, then pressed while still frozen so the ice stays behind and only concentrated juice comes out. Canada makes more of it than anywhere else because the freeze is reliable. Beyond that, Niagara and the Okanagan make dry Riesling and Pinot Noir worth a look.
