Can you explain the Scotch whisky regions in one paragraph?

Speyside has the most distilleries and tends towards orchard fruit, malt and sherry cask sweetness. The Highlands cover a wide area and vary from light to robust. Islay is known for peat smoke and sea salt. Campbeltown is small and often slightly oily and briny, and the Lowlands lean light and grassy. Regions are a rough guide, not a rule. How long does an opened bottle of whisky keep?

Whisky does not spoil, but oxygen slowly flattens the aroma. A bottle above the halfway mark holds up for a year or more. Once it is below a third, the flavour usually fades within a few months because there is so much air in the bottle. Keep it upright, corked, away from sunlight, and decant into a smaller bottle if the last drams matter to you.

What does cask strength mean, and should I add water?

Cask strength means the whisky was bottled without being diluted to a standard strength, so it often sits between 50 and 60 percent alcohol. Adding a few drops of still water lowers the burn and can open up the aroma. Add it gradually, taste after each addition, and stop when the whisky smells widest. There is no correct amount, only your own preference.

Single malt or blended whisky — which should I buy?

Single malt comes from one distillery and is made only from malted barley, so it shows that distillery's character. A blend combines malt and grain whiskies from several distilleries for a smoother, more consistent profile, and it is usually easier on the wallet. Blends mix well; single malts are more often drunk neat or with a little water.

Are spirits taxed in Hong Kong the way wine is not?

Yes. Hong Kong abolished wine duty in 2008 and charges no sales tax or VAT, but spirits above 30 percent alcohol are still dutiable. The rate was cut in October 2024, which reduced the tax portion on higher-priced bottles. Whisky here is still often competitive against Europe once VAT is taken into account.

What is peat, and how do I know if I will like it?

Peat is dried turf burned to dry the barley, and the smoke leaves flavours of bonfire, iodine and sea air. Labels sometimes list phenol in ppm as a rough measure of intensity.
