Japanese sake, whisky, umeshu and shochu — delivered across Hong Kong.

Sake, briefly. The grade comes from how much of each rice grain is polished away before brewing. Junmai Daiginjo is the most polished and the most delicate; Junmai Ginjo sits just below; Junmai is fuller and works better with food. Dassai 23 — the 23 means 77% of the grain is polished off — is the one most people know.

Serve it cold. Premium sake is a chilled drink, not a warm one. Warming is for simpler, sturdier styles.
