William Fevre, Chablis 1er Cru Beauroy Domaine 2011 (1x75cl)

Premier cru Chablis from the Beauroy vineyard, and from 2011, so this is Chardonnay with real bottle age on it. Most Chablis gets drunk young, which makes an older one worth sitting down for.

Serve around 11-12C so the aromatics have a chance. Oysters and shellfish are the classic match, but it also handles richer fish and chicken.

Tasting notes

Chablis usually shows citrus, green apple and a flinty mineral note, and with age it typically softens toward honey, hazelnut and a rounder, fuller texture.
