Baijiu distilled from sorghum, from the Pure Series, which is a lighter and cleaner style than the heavy sauce-aroma bottles a lot of people think of first. If baijiu has previously been a one-sip-and-done experience for you, this is the easier end of the category.

It sits well on a hotpot table or a late dinner where the food is loud and salty. Serve it small and cold, and it also works mixed with soda or tonic if the table prefers something longer.

Tasting notes

Lighter-style sorghum baijiu usually shows clean grain, a little sweet fruit and a dry, warm finish, without the heavy fermented depth of sauce-aroma styles. Try it chilled in small cups.
