Hungary, best known for Tokaji and now making serious dry wine from the same grape.

Reading Tokaji. The sweetness is graded in puttonyos — the number of baskets of botrytis-affected berries added to the base wine, from 3 up to 6, and higher again for Eszencia. Furmint is the grape behind all of it, and vinified dry it gives a firm, smoky white with real acidity. Tokaji was classified in 1737, well before Bordeaux.
