How the grades work. The names describe how much of the rice grain was polished away before brewing. Junmai is pure rice with no added alcohol. Ginjo has at least 40% of the grain removed, Daiginjo at least 50%, and both tend to be more aromatic and lighter. Junmai Daiginjo means both things at once. More polishing is not automatically better — it is a different style, usually cleaner and more floral, and priced accordingly.
