Marlborough put New Zealand on the wine map in the 1980s with a style of Sauvignon Blanc nobody had tasted before: explosively aromatic, with passionfruit, cut grass and lime. It is now one of the most recognisable wine styles in the world.

Central Otago is the world's southernmost wine region, in the mountains of the South Island. Its Pinot Noir is darker and more concentrated than Burgundy, with real fruit intensity and firm structure.

Why New Zealand works well in Hong Kong. Two practical reasons. The wines are almost all screwcap, which is far more reliable than cork in this climate and for shipping. And Marlborough Sauvignon's high acidity handles chilli, coriander and lemongrass better than almost any European white — it is one of the few wines that genuinely works with Thai and Vietnamese food.

Serve Sauvignon 8–10°C, Pinot Noir 14–16°C.
