The northern Rhône is where Syrah comes from, and it tastes nothing like the Australian Shiraz made from the same grape.

Why. These are terrifyingly steep granite slopes above a river, worked by hand because no machine can climb them. The climate is cool. The result is savoury, peppery and structured rather than sweet and jammy — black olive, smoked meat, cracked pepper, violets.

Côte-Rôtie — the "roasted slope". The most aromatic of the three, sometimes co-fermented with a little white Viognier, which lifts the perfume.
Cornas — the darkest and most brooding. 100% Syrah, no compromise.
Saint-Joseph — the most accessible and the best value entry point.

Try this if you have written off Shiraz as too big and sweet. Northern Rhône Syrah is the same grape making the opposite argument.

Decant an hour. Serve 16°C. Grilled meat, black pepper, olives, game.
