What Wine Goes With Hotpot?

Hotpot is the hardest food in Hong Kong to match with wine, and most advice about it is wrong. The problem is not the meat. It is the sauce bowl.

What actually fights the wine

Chilli oil makes tannin taste harsher and alcohol taste hotter. A big Cabernet with a mala broth is genuinely unpleasant — the wine turns bitter and burns.

Sesame paste and fermented bean curd coat the palate. Anything delicate simply disappears underneath them.

Constant heat and steam mean you drink faster than you would at a normal meal, and everything at the table is served scalding.

The three rules

1. Low tannin. Tannin is what clashes with chilli. This rules out young Bordeaux, Barolo, Napa Cabernet — the wines people reach for when they want to bring something good.

2. High acidity. Acid cuts through fat and resets the palate between mouthfuls. This is the single most useful property.

3. Serve it cold. Colder than you think. The table is hot, the room is hot, and a wine at 18°C will taste flabby within minutes.

What works, and why

Champagne and sparkling. The best answer, and not because it is celebratory. Bubbles and acidity scrub the palate, there is no tannin to clash, and it is served cold by default. Champagne · Prosecco

Riesling. German Riesling with a touch of residual sugar is the classic chilli match — the sweetness cools the heat the way a sip of milk does. Do not be put off by "sweet"; a Kabinett is not a dessert wine.

Beaujolais and lighter Pinot Noir. If the table wants red, these are the reds that work: bright fruit, low tannin, served slightly chilled. Burgundy

Dry rosé. Underrated here. It has the acidity of a white with enough body for the beef and lamb.

What to avoid

Young classified Bordeaux, Barolo, Amarone, high-alcohol Shiraz, and heavily oaked Chardonnay. All of them are good wines. None of them survives a sauce bowl.

If you are bringing a bottle to someone else's hotpot

Bring champagne. It is the only category that is simultaneously a good match, obviously a gift, and impossible to get wrong in front of other people.
