Chablis is Chardonnay grown in a cool corner of northern Burgundy, and it usually ends up tighter, drier and more mineral than warmer-climate Chardonnay. Patrick Piuze is a name Chablis drinkers in Hong Kong tend to recognise.

This is a fairly obvious pick for seafood: steamed fish, oysters, prawns, or dim sum on a Sunday. If someone in your life has said they don't like Chardonnay, a bottle of Chablis is usually the one that changes their mind.

Tasting notes

Chablis typically shows lemon, green apple and a flinty, chalky note, with high acidity and a dry finish that stays clean. Serve chilled at around 10-12°C, not straight out of a cold fridge.
