Les Griffons de Pichon Baron 2017 (1x75cl)

Les Griffons is one of two second wines made at Château Pichon Baron, a Second Growth of Pauillac. Unlike most second wines it has its own identity: Griffons is Merlot-led and comes from a distinct set of parcels, while the estate's other second label leans on Cabernet.

What Pauillac means. The commune of Latour, Lafite and Mouton. Pauillac reds are the most structured and longest-lived on the Left Bank — firm cassis fruit with cedar and graphite behind it.

Why 2017. A cooler, fresher vintage than the run of hot years that followed. The wines are classically proportioned and come round sooner, which is what you want from a second label.

When to drink it. Now with an hour in a decanter, or hold five years. Red meat, lamb, aged cheese.
