Temperature is the thing most people get wrong at home. Straight out of a cold fridge the aromas shut down, and at room temperature in a Hong Kong summer it goes flabby. Take it out of the fridge fifteen minutes before pouring, use a wine glass rather than a tiny cup, and once opened keep it chilled and finish it within a few days.

Serve cool rather than ice-cold so the aromatics have room to show. Usually good alongside sashimi, grilled fish, or a quiet dinner at home.
