Dom Pérignon is made only in years the house judges strong enough to declare — there is no non-vintage version. 2012 is one of the most highly regarded of the recent declarations.
2012 versus 2015. 2012 was a small, difficult harvest that produced concentrated, tightly built wines — the vintage critics point to for structure and ageing potential. 2015 is riper and more immediately generous. If you are drinking tonight, 2015; if you are keeping it or want the more serious bottle, 2012.
When to drink it. Serve at 10–12°C, not ice-cold, and use a proper wine glass rather than a flute. Give it fifteen minutes in the glass — it opens.
