English wine, which is mostly sparkling and mostly serious.

Why it works. The chalk running under southern England is the same seam that surfaces in Champagne, and the grapes are the same three: Chardonnay, Pinot Noir and Pinot Meunier. The method is identical — second fermentation in the bottle, years on the lees. The climate is cooler, so the wines keep more acidity and generally taste tighter and drier than their French equivalents.
