Cognac, Armagnac and brandy from elsewhere.

Reading the initials. VS means the youngest spirit in the blend has spent at least two years in oak, VSOP at least four, XO at least ten. They are minimums, not averages, so houses regularly exceed them. Cognac is distilled twice in copper pot stills and tends to be smoother; Armagnac is usually distilled once in a column still and keeps more of the raw fruit and grip.
