Three broad families. Jamaican and Guyanese pot-still rum is the loudest — heavy, funky, distilled from molasses. Spanish-style rum from Cuba, the Dominican Republic and Central America is lighter and usually column-distilled, often aged in a solera. French agricole from Martinique and Guadeloupe is made from fresh cane juice rather than molasses, which gives a grassy, vegetal character you either want or you do not.
