How to tell dry from sweet. Trocken on the label means dry. Kabinett, Spätlese and Auslese describe how ripe the grapes were at picking, not how sweet the finished wine is — a Spätlese can be either, so look for Trocken. Mosel Rieslings are the lightest in alcohol and the most delicate; the Rheingau and Pfalz give fuller versions. German Pinot Noir, labelled Spätburgunder, is a real alternative to village Burgundy.
