White Burgundy is Chardonnay, and where it grows changes it more than any winemaking decision.

North to south. Chablis is the coolest and the leanest, usually unoaked or lightly so. The Côte de Beaune — Meursault, Puligny-Montrachet, Chassagne-Montrachet — is rounder, barrel-fermented, and the benchmark most other Chardonnay in the world is measured against. The Mâconnais in the south, including Pouilly-Fuissé, gives the same grape at a friendlier price.
