Romain Collet made his first vintage at age 21, and since then the fourth generation Collet has moved the domain to native yeast and organic and biodynamic farming. The vineyards are located on Kimmeridgian limestone marl bedrock and clay topsoil, and the vines date back to 1978-83. This standard Chablis spends 11 quiet months in a tank with no stirring. The 2022 is classic, with a herbal, mineral, citrus base pitching Meyer lemons and subtle streaks of tangerine. Showy yet reserved, and sophisticated. Fabulous oyster wine. Drink from 2024 - 2026.
